What’s your favourite place on the Northern Beaches?
1. The banquettes at Cibaria Manly – standing in the middle of room so I can see the view, surf, the venue and the people.

Is there something about you that would surprise people?
I’ve had two heart attacks – big shout out to Heart Research Australia for their amazing work.

What’s something everyone should do at least once?
Catch a wave at an Aussie beach.

It’s Sunday afternoon, where do we find you?
Cooking at home with family and friends, or drinking dirty martini’s on the terrace at Ormeggio!

If you were down to your last $50 what would you spend it on?
My daughter and whatever she wants.

How did Cibaria happen? How long have you been working in the business?
Cibaria Manly opened just over a year ago. It’s been a ride! Activating that Manly beachfront – people enjoying Cibaria at all times of the day, our team greeting guests by their name, music playing – it’s such an incredible vibe, I love it! Cibaria is one of my biggest sources of pride right now.

Best business experience?
Opening my first restaurant, Ormeggio 17 years ago. It was such an exciting time. I was in business with my best mate and my wife and it was so liberating.

If you weren’t doing this, what would you be doing?
Something creative – artists or architect.

Best part of about your job?
I love working on new concepts and venues, new dishes – I’m a creative person. I particularly like seeing people around me grow with the business.

Most stressful part of your job?
Managing people.

What’s the best part of working on the Northern Beaches?
I have lived on the Beaches for just over 20 years – there is no where I’d rather live.

What would you rate 10/10?
Right now – Risotto Milanese, I’m hungry!

Greatest strength?
My wife.

Greatest weakness?
My kids.

Does anything scare you?
Watching my kids do handstands and cartwheels.

What’s your most treasured possession?
My family.

What’s your idea of absolute happiness?
A sunny afternoon at home, cooking for family and friends. My restaurants busy and buzzing and my staff happy.

How do you switch off?
Playing golf because it’s a phone-free zone.

What’s your guilty pleasure?
Barilla Pesto.

Who’s your personal hero?
My Nonno Bruno.

If you were an animal, what would you be?
Polar Bear.

How would you like to be remembered?
That I really lived. And as a leader, i really created the opportunity for others to grow.
